- 300g waxy potatoes
- 1 onion
- Olive oil
- 5 large eggs
Peel the potatoes (you may use a speed-peeler to go quicker), then with care cut them into thin slices. Pat the slices dry with a clean tea towel.
Peel and slice the onion.
Drizzle 2 tablespoons of olive oil into a small frying pan using a medium heat. Then add together in the pan the onion and the potatoes.
Turn down the heat to low and cook for 25 or 30 minutes, or until the onions are turning golden and the potato slices are cooked through. Tip: don’t stir it too much or the potatoes could break up. You can use a fish slice to flip them over halfway through.
Get a mixing bowl and crack the eggs into it. Season with a tiny pinch of sea salt (or regualr solt if you don’t have it) and black pepper. Then, whisk together using a fork.
When the potatoes and onions are cooked, remove the pan from the heat and tip them into the eggs. Transfer back the mixture into the frying pan and place it over a low heat. Cook for around 20 minutes or until there is almost no runny egg on top.
Using a fish slice slightly lift the sides of the tortilla to loosen it. Then carefully flip the pan over a dinner plate and tip out the tortilla. From the plate slide the tortilla back into the pan, now facing down, and cook it for another 5 minutes or until it gets golden and cooked through.
Take the tortilla out of the pan onto a serving board and then cut into 6 wedges. You can now serve it hot or cold and with a simple green salad.
